Man. Monday already?  Where do the weekends go?  I need a time machine.  Not one that takes you back in time but one that gives you MORE time.  We enjoyed a busy weekend.  Part of it was spent in Des Moines hanging with friends and family.  The other half was spent getting our yard ready for Summer.  A good mix of fun and productivity!

We have been enjoying some pretty decent Spring weather in Iowa.  Spring for us means the start of grilling season!  We were super excited to eat our first grilled pizza of the season.

Happy Friday!  Who's pumped for a three day weekend?  I would be if I had one but I have to work on Monday.  On Labor Day.  The irony is not lost on me on that one.

We still have plans to finish up our never-ending living room project and sneak in some end of Summer fun.

But today I'd like to share with you one of Nate and I's favorite weeknight meals, easy enchilada chicken.  This recipe whips up in under 30 minutes.  We often cook the chicken on the weekend and it whips up in under 10 minutes.  And it warms it up deliciously.  Winning all around.

Mediterranean Pork and Orzo

I'm doing this weird thing lately where I eat vegetables.  I am a super picky eater and vegetables have never made the cut.  In an effort to be a real life grown-up, I decided to suck it up and eat the vegetables.  

I have been trying all kinds of vegetables.  Once I got over the fact that they don't taste like chocolate, things got better.   Brussel sprouts and kale are the worst things I've ever eaten in my entire life.  I have tried both a couple of times and cooked different ways.  They will not make the final cut.  Sick.

Spinach and tomatoes, however, have made it.  I am working on incorporating both of them into more of the meals that we eat.  One of favorites in the vegetable rotation is this pork and orzo recipe.
