Mediterranean Pork and Orzo

I'm doing this weird thing lately where I eat vegetables.  I am a super picky eater and vegetables have never made the cut.  In an effort to be a real life grown-up, I decided to suck it up and eat the vegetables.  

I have been trying all kinds of vegetables.  Once I got over the fact that they don't taste like chocolate, things got better.   Brussel sprouts and kale are the worst things I've ever eaten in my entire life.  I have tried both a couple of times and cooked different ways.  They will not make the final cut.  Sick.

Spinach and tomatoes, however, have made it.  I am working on incorporating both of them into more of the meals that we eat.  One of favorites in the vegetable rotation is this pork and orzo recipe.

Chocolate Chip Skillet Cookie

I've confessed my love for the cast iron skillet in the past.  (Here are our past cast iron skillet recipes: Pumpkin Chocolate Chip Skillet CookieBlackberry Cobbler or cheesy hashbrowns.)  Somehow I have never shared our all time favorite, the chocolate chip skillet cookie.  

We could also name this recipe  "Oh crap, I need to bring treats tomorrow".  It's delicious.  The recipe whips up quickly but seems fancy.  The cookie bakes in the cast iron skillet that has already cooked delicious bacon and cheesy hashbrowns.  So much flavor.  The cookie has a slight crunch on the edges but a super soft middle.  The skillet cookie is both Nate and I's favorite type of Chocolate Chip cookie.  And we are Chocolate Chip cookie connoisseurs.

Mango, Lime and Black Bean Salsa Salad

Today I'd like to share with you one of our favorite warm weather recipes.  It was a beautiful 80 degree day last week when we whipped up this Mango, Black Bean and Lime Salsa Salad.  

Why the name salsa salad?  Because I'm just not sure what to call this.  It's sort of a salsa.  Sort of a salad.  It's like last week when I was in line at Subway.  The lady in front of me said she wanted a salad.  The Subway employee asked if she'd like lettuce or spinach.  The lady said "Neither."  The employee asked "So, you want a salad without lettuce or spinach."  The lady said "Yes."  Long story short (not a short wait in line) her "salad" was chicken breast, tomatoes and ranch dressing. Oy.  So it's sort of like this recipe.  A salad without lettuce or spinach.
