Easy Enchilada Chicken
/Happy Friday! Who's pumped for a three day weekend? I would be if I had one but I have to work on Monday. On Labor Day. The irony is not lost on me on that one.
We still have plans to finish up our never-ending living room project and sneak in some end of Summer fun.
But today I'd like to share with you one of Nate and I's favorite weeknight meals, easy enchilada chicken. This recipe whips up in under 30 minutes. We often cook the chicken on the weekend and it whips up in under 10 minutes. And it warms it up deliciously. Winning all around.
Easy Enchilada Chicken
- 4 boneless chicken breasts
- Taco Seasoning (Just enough to coat chicken breasts.)
- 1/2-3/4 cup enchilada sauce
- 4 ounces cheddar cheese, shredded
Sprinkle the taco seasoning on both sides of the chicken and then cook. (We grill or saute in a pan.) Cut the chicken into small pieces.
Place in a greased 8x8" baking dish. Poor the enchilada sauce over the chicken and toss to coat. Sprinkle the cheese over the mixture and bake at 350 degrees for 10-15 minutes, or until cheese is melted.
Serve on tortillas or over rice!
